weekend living

I would be remiss not to start today’s post in commemoration of 9/11. I can’t believe it has been 17 years. Such a sad day for the country. It was also the day of my nana’s wake, so my emotions were frenzied. Let’s all take a moment to think of the victims of this day.

My weekend started on Friday with dinner with my mom and my brother’s girlfriend, Cait (girlfriend-in law?). It was a lovely night and we were able to sit outside and enjoy the nice weather…finally.

On Saturday, I had a relaxing morning with breakfast and some TV watching with my mom.

The afternoon was productive with some errands, veggie prepping, and a workout. My jump roping was a little challenging as my shorts kept falling down!

That night, I met up with some friends to attend a 30th birthday party. I was in charge of this veggie platter flower.

Sunday was another productive day with lots of shopping. I should probably reel in on the clothes shopping for my niece. Everything is just too darn cute! She needs clothes, she’s been naked baby all summer with the heat!

Once we got home, I had a quick bite to eat before heading out on a 4 mile run.

My two running goals right now are to 1). Run a 30 or under minute 5k and 2). Run a half marathon. More on point numero uno tomorrow!

On Sunday night, the fam squad came over for an excellent homemade Italian dinner. A perfect way to end (or start) the week!

Welcome back from the weekend, we’ve survived another hot one.

My Friday started, as it usually does, nice and early thanks to a 4:30am wake-up call. This also means my weekend kicks off early, so I can’t complain. After work and a solid strength training workout, I lounged around the house for a bit before it was Red Sox v. Yankees time. I almost feel bad for the Yankees, but not quite.

I headed into the game with a friend who happens to be a Yankees fan. I did feel bad for her team of losers and made sure to sing along to Sweet Caroline nice and loud for her.

In college, I was so used to walking to and from the game from just down the street and afterwards, driving into the city, that taking the subway was an adventure. A very hot, sticky, and crowded adventure.

On Saturday, I had a leisurely morning, sleeping in and enjoying breakfast.

My niece and sister came over for the day and we had a great time just watching this little face.

It’s crazy how fast they grow!

I went to bed early for a Saturday night and was up early on Sunday morning to fit in a run before my hair appointment. It was warm, but dry outside and I cruised for a solid 4 miles of running. Felt strong!

After grocery shopping and touching up my roots, it was meal prep time. I chopped up a ton of veggies for salads and made my breakfast for today.

I started watching Sharp Objects on HBO, so far so good.

Fridays = The Best Days

Happy Friday!

I know we shouldn’t live for the weekend, but Friday has long been my favorite day and I can’t help but feel happy when it arrives.

Let’s start it off by going back to Thursday, which wasn’t bad itself.

I woke up Thursday morning and enjoyed a classic breakfast sandwich of my own making before heading to the gym.

First, I weighed myself and realized I’m down 1.6 pounds!

My workout included 40 minutes of arm and core exercises, as well as a treadmill run. I’m running “long” distance twice a week and once a week, I’m working on speeding up my mile. I’ll run one mile, then complete sprints.

A quick snack to refuel was this peanut butter toast and berries.

After my morning shift, I came home and threw this delicious salad together. With a kale base, I threw in bell pepper, carrots, peanuts, tofu, and chicken with balsamic vinegar. So good!

Dinner was leftovers during my night shift. Chicken with white sauce, spinach rice, and sautéed spinach and kale.

the breakfast sandwich

Ever since returning to personal training, I have an odd schedule. Not only do I work mornings and nights, but the second half of the week is a lot busier than the first half. On Monday, I headed to the gym to crush my workout before seeing a client.

It was arms day and I was aiming for heavier weights, which resulted in tired arms. Success! I finished up on the bike for a sweaty (and headphone-less!) ride. So sad. Even though I charged them up, my headphones just didn’t want to turn on and it was time to replace them. I hope the new ones work well and don’t rub on my neck to cause a rash! I love the wireless ones, but my previous pair had a bar type thing connected to it and that + sweat, did not bode well for me.

The afternoon was spent eating lunch, doing chores, and cuddling up with the little dude who couldn’t decide whether he wanted to be cuddled or chased.

Now back to me and my odd schedule…since I’m on the run most mornings, whether to get to work or fit in a workout first, I need a nutritious, quick, and filling breakfast. Welcome to the art of the breakfast sandwich!

My favorite combination is an English muffin, two eggs scrambled, with pepper jack cheese, and a chicken sausage patty. Fruit of course, on the side.

The breakfast sandwich is a thing of beauty because it’s simple, but potentially versatile, quick, filling, and chock full of nutrients.

You could go meatless and swap in fresh spinach and/or tomato. You could fry or poach the eggs if you prefer them drippier. You could throw everything into a wrap, covered in waffles, or even a lettuce wrap if that fits your fancy.

If you’re on the run, don’t count out breakfast!

life with a cat (and work and stuff)

Hello, party animals! We’re onto the second half of the week and I’m already excited for the weekend because I have some fun times planned with friends. Unfortunately, we’re not quite into the fall weather yet, but I suppose anytime it’s not snowing is a win.

I hope you can all strive to be as comfortable as this dude.

So far the week has been usual. I went through an excellent arms workout on Monday, targeting the biceps, triceps, and shoulders before doing a core stint and a sweaty half hour ride on the bike. After a client, I headed home and did some chorse-y type things before heading back to work.

Tuesday started much in the same way except I had a client before my workout. This workout was quad and glutes centered, which means a lot of squats and lunges! After, I worked on my core and hopped on the treadmill for a run that left me dripping in sweat- my favorite mark of a great workout. Once I was home, I flitted around starting dinner prep and other things. It was an early night to bed for me because of my early call time on Wednesday mornings!

The second half of the week is actually busiest for me as there’s a lot of running back and forth at the gym. I worked until 9:30, did my cardio, had another client, then finished up my workout with strength training- chest, back, and core! After lunch and some playtime, it was back to work.

oatmeal in the morning

Happy Tuesday friends!

I’ve got another quick and easy breakfast-at-work for you. All you’ll require once at work is a microwave!

Warm oatmeal is one of my absolute favorites. For whatever reason, I just can’t get behind overnight oats and I think the point of oatmeal is for it to be served warm. Knowing this, I decided to make my early morning workdays friendlier and tastier with one of my favorite dishes.

The night before, I always prep a serving of oats with some cinnamon in one container. The next is a serving of milk with a splash of vanilla. A third container (bear with me) is full of fruits, my usual are blueberries and strawberries. And last, but never least, I’ve got my peanut butter for an extra dose of healthy and yummy.

The next morning, I put the milk into the oats and cook for a minute, stir, cook for 30 seconds, stir, then cook for another 30 seconds. You’ll know when it’s ready, between 2-3 minutes depending on your microwave.

I stir in the peanut butter, then drop in the fruit and enjoy!

It’s been a bit since we’ve had our usual Food Friday’s post and I’m embarrassed to admit I don’t have that many for you today. By the time I realized I should be collecting them, it was already Wednesday after lunch! But we get what we get and we don’t get upset- or so I used to tell my kindergarteners!

Oatmeal! This will be featured at some point next week. It’s delicious.

Since I work Thursday nights and have to work early Friday, I prefer to eat dinner on the earlier side. I prepped an excellent cod fillet with spinach rice and a vegetable medley.

It’s Friday, so smile to yourself, do a little jig, and get back to work because it’s almost the weekend!
