pancakes and beach days

Once again, I am not sure how we’re already on Monday. The weekend was a good one but flew by!

I started off Friday night with a workout that I intended to be straight-up strength training and ended up being a run. The treadmill is not the most fun ever and I get bored easily, so I mixed it up a bit and did 6-6-5-5-4-4-3-3-2-2-1-1 alternating between walking and running by minutes, increasing speed as I decreased minutes and ended for a complete 45 minutes with some Tabata Intervals- 20 second sprints, 10 second rest. I was sweaty and tired by the end and ready for a relaxing evening.

I pretty much watched Sex and the City, read a bit, and fell into a deep sleep!

Saturday morning, I woke up for a hankering for pancakes and tried out a new recipe that I’ll get to later in the week…After breakfast, I went grocery shopping before hitting up the gym for a killer strength training workout, the effects of which I am still feeling as I type this Monday morning.

I fit in a quick shower and lunch before it was time to meet my friend for a movie night. He hadn’t seen Wonder Woman yet and since I enjoyed it so much-and the tickets at this theater were cheap- I tagged along. We ended up going to the Vista, which is where they shot that terrifying movie scene in Scream 2. It was kinda a big deal.

After the movie, we got dinner at Shake Shack and a classy dessert at McDonalds for a McFlurry and called it a night!

Sunday morning called for more pancakes, this time a different recipe.

Since Sunday was my rest day, I threw in a load of laundry and relaxed before it was time to meet my cousins at the beach. The wind prevented me from actually diving into the water, but it was nice and relaxing just sitting and chatting the afternoon away.

If you look closely enough, you’ll notice a line of seagulls just sitting there watching the ocean. I can respect that as I too have been enjoying my tour of SoCal beaches, but I was also suspicious.

That afternoon, it was time for beers, chips and salsa, burgers, and desserts.

I got home in time to fold laundry and enjoy another episode of Sex and the City before pulling the curtains on the weekend.

weekend and travel plans

This weekend was one of relaxation after traveling. I did a lot of nothing, with some exercise thrown in to assuage the guilt.

I had taken a week off from working out thanks to my travel last week and it was much needed. On Saturday, I got back to it with a total body strength routine and some spinning and I was feeling those DOMS on Sunday. A run/walk combo helped stretch out my sore legs in particular, but they were still achey on Sunday night and this morning! I have a love/hate for this kind of pain, but it is the good kind of pain. I guess it was time to mix things up with my plan.

I was also able to catch up on sleep, which had gotten messed up when I took a red-eye to Boston last Friday. I don’t sleep well on planes, especially with my legs feeling a bit cramped. I had a couple of hours to nap once arriving home before my mom and I got mani/pedis for my cousin’s wedding. It was dancing time at the beautiful ceremony and reception and we were up past 2 am, which meant I was awake for the better part of 24+ hours and jet lagged. Whew. But it was well worth it.

The rest of my break was spent with my family, shopping, going to movies and dinner, and spending some quality time. It’s always hard to leave, but it was great to see everybody. Even though it’s a long flight from coast-to-coast, particularly east-to-west, it was nice to gain three hours of the day on the way back.

I captured some snapshots from the plane:

It was hard to not include the wing of the plane in my photos, so that accounts for the odd angles.

Somehow, it’s Monday again. Enjoy it!

Weekend Recap and Food Pics

Hello to Monday!

I finally have some food pictures to share- I’ve been so bad about that lately. Let’s start with last night’s veggie heavy dinner.

This dinner included a huge greek salad, grilled peppers, mushrooms, and zucchini, asparagus, and a delicious piece of salmon that I drizzled with barbecue mustard. Yum!

Now to today’s breakfast!

My favorite scrambled egg/egg whites with cheese, berries, and waffles. I stopped at Target yesterday to buy myself some new sheets- excellent choice!- and couldn’t help but browse the food department. I found two new pancake/waffle mixes. I’ve had the Kodiak Cake brand before, all-natural and whole grain, but they now have protein-packed versions and I couldn’t help but buy both the buttermilk and the peanut butter variety. I went with buttermilk this morning and was not disappointed!

Yesterday, I found myself on a bit of a shopping spree, buying a few shirts and a cute jacket for the summer at the Loft and my new sheets and an organizer for work at Target. In addition to the mixes, I found my favorite protein bar flavors. Yay!

After, it was time to play some softball! I was feeling a little rusty, but I wasn’t a complete failure. The rain made things a bit on the unpleasant side because it was cold.

Going back to Saturday, I did very little more than sit on the couch for the evening, watching the Red Sox whoop the Yankees. Before that, I did earn my rest with a full morning of training and then a beautiful run outside. I’ve been lifting heavier this week and my limbs are starting to feel it. It pretty much wasn’t my fault that I was couch-ridden on Saturday because I was S-O-R-E, but in the best way. DOMS are real, man. Thanks to increasing my intensity, I actually am cutting down to only five official workouts a week. One day is mostly rest, but the last day will be active rest, like softball, Yoga, hiking, etc. Since we’re now in May, I think it’s the perfect time for it! I also really need to give my body a chance to recover from the strain!

Let’s all have a great week!
