This is my 100th post! Thank you all for taking the time and reading! I hope I’ve offered some insight on living healthy, taking enjoyment out of life, and made you laugh in some way. I’ve had such fun with the first 100 posts and hope to continue having even more fun for the next 100!

You really can’t beat a warm bowl of oatmeal on a chilly autumn morning, especially combined with a steaming cup of pumpkin spice coffee. This was a chocolate peanut butter concoction with an assortment of fruit and shredded coconut on top.


Two Van’s whole wheat waffles topped with peanut butter and jelly was a quick breakfast that hit the spot.


These pancakes are as beautiful as they are delicious. I’m probably eating too much of them, but they are just so good!


Eggs over easy are always a good option, especially paired with a side of buttered toast and fruit, lending to a yummy and healthy start! Don’t be afraid of those yolks!


I, um, might have a problem, I didn’t realize I had eaten these pancakes so close in the same week. I guess you can’t help what you like (within reason). Thank goodness they’re protein-filled and good for you!


Anticipating that I had a busy day on Saturday and wouldn’t have time to get to the gym later on, I woke up early and got going. To help make the process a bit sweeter, I prepped the night before with a delightful pumpkin baked oatmeal that I warmed up on Saturday morning.


I was feeling indecisive on Sunday morning, so I combined the best of both worlds. I had one piece of toast topped with peanut butter and one egg with a piece of buttered toast. Can’t go wrong!


This lunch came together quickly. It included leftover curry sauce, chopped veggies, and chickpeas. A bit spicy and a lot delicious.


Leftover pizza and a side salad is the greatest lunch. I love this combination!


This was kind of an odd lunch day because I was running around. I enjoyed some almonds and raisins, one of my new favorite snacks, and chopped veggies while out for the day. When I got back home, I had a yogurt and a bowl of popcorn. Pretty snacky, but all healthy and nutrient-filled!


Believe it or not, I was craving peanut butter for lunch one day…it was one of the days I had eggs, so don’t judge me too hard. This was something I kept seeing pop up on Pinterest, so I stuffed a whole wheat tortilla with chocolate peanut butter, strawberries, and banana and grilled it up. To make it even prettier, I drizzled some strawberry jelly on top.


I kept hearing about this Skyr thing. It’s an Icelandic yogurt type product that is even thicker, but still very good. It has a ton of protein, so I enjoyed a cup with a salad consisting of chickpeas and a variety of veggies. A piece of cinnamon toast completed the meal.


After a girl’s day out with my mom and sister, we met up with my dad and grandma for lunch at Chili’s. I chose the grilled chicken topped with tomato and avocado with a side of broccoli and black beans. I also enjoyed some chips and salsa to start.


Lunch out on Sunday was another girl’s night out, but this time with my college friends, Stephanie, Katie, and Erin. We met up and went apple picking before stopping at Tavern in the Square for lunch. I opted for the veggie melt on ciabatta that had portabella mushrooms, zucchini, and eggplant, and a couple of fries.

Dinners started with pizza and salad and I believe we know how much I love that combination.


Crockpot buffalo chicken, corn on the cob, mashed potato, and green beans came the next night and it was an amazing fall meal! Full of flavor!


This was actually my mom’s plate because I had already devoured a bunch of it before remembering to snap a picture. I put my beloved macaroni and cheese in a bowl because I didn’t want any juice touching and defiling it. The hot dog was chopped up and smothered in marinara sauce, one of my Nana’s recipes. A side of spinach and mushrooms made this dinner complete.


Grilled chicken over salad is always a great, healthy dinner. We had mozzarella that needed to be used, so I chopped up some tomato to go with it over the sour dough bread and baked it up.


I cooked up some kale and ricotta filled ravioli and enjoyed it with veggies and chicken sausage. I added the leftover cauliflower that was too good to be wasted!


On Saturday night, Stephanie and I visited Salem to kick off a month of Halloween festivities. It was a rainy day, but still fun. After walking around and dodging rain drops, we ended up at our favorite restaurant in Salem for some Chinese food. We split a side of spring rolls and crab Rangoon to go along with sesame chicken, broccoli, and brown rice. Splitting food when going to restaurants is a good way to not only save money, but to try different things. It also helps keep portions down because you automatically split the entree.


Sunday night, Stephanie and I saw the movie Annabelle, which was not as scary as The Conjuring, but I liked the cast and was pretty intrigued throughout. I even screamed and jumped a few times, but it didn’t leave me cowering later on like the first movie. I made a quick grilled cheese and chopped up some celery and pepper for a toasty meal.


Another great week of food! Now that it’s fall, I am going to have to watch my carb and comfort food intake because it’s the season for festive eating!
